Last year my dad had informed me he will be getting married in Tacloban the place his wife grew up in the Philippines . My dad said he would like all of his family members to attend since they couldn't go to the one in the United States. Carmina booked her flight during Philippine Airlines ’ year-end sale at the start of 2026. I told my dad about my travel plans for a short trip from Friday, April 17 to Sunday, April 19. My cousins also asked for my flight details so they could book the same flight. My dad said he will book my room for me sharing with two family members at Summit Hotel in Tacloban . Sending me the confirmation booking information for my reference. As the months went by, before I knew it, the big day had finally arrived—a rare event that doesn’t happen too often. Everything had been carefully planned by my dad and his wife, Tita Cielo. When we arrived, the check-in time was 2 PM, but there was a mix-up with the rooms. Lazy sushi is the lazy way no need to wrap and roll with seaweed. This is a favorite recipe that my family and friends love for me to bring to a party.
I found this easy to make if you prepare the imitation crab, mango and cucumber one day ahead.
In the Philippines California Maki has mango not like in the States it is avocado.
Ingredients:
Japanese Rice
Rice Vinegar
1- Package Imitation crab
3 pieces - Large Ripe Mango or Ripe Avocado
2 pieces - Cucumber
Mayo enough to stick the imitation crab together
Wasabi tube
Kikkoman Lite Soy Sauce
Furikake Rice Seasoning (can be found in Ranch 99)
Best Korean Roasted seaweed that are prepacked individual.
Optional: Precooked Frozen Eel
Step 1:
Follow the instructions on the Japanese rice package and cook in the rice cooker.
If, you’re wondering how cup of rice you should make it all depends how many trays you plan to make. For example, if you plan to make one small casserole you would need 3 cups of Japanese rice.
Step 2:
Separate imitation crab meat
Add mayo
Mix together
Set aside, place in small Tupperware and put in the fridge.
Step 3:
Slice the mango and cucumber into small cubes.
Set aside in separate Tupperware containers.
Place in the fridge.
Step 4:
Once Japanese rice is already cook remove the rice and place in flat casserole dish.
Let it cool down.
Add 2 tbs spoon rice vinegar
Layering the Sushi:
Spread the rice flat
Add the cucumber
Add the mango
Add the avocado
Step 5:
Add the imitation crab meat and eel (optional)
Sprinkle the Rice Seasoning
Ready to eat!
Note:
You can always change the rice to brown rice or etc.
For those who are watching their carbohydrate you can opt the rice and use romaine lettuce.
I always do this at home for us who are on a diet. You can add hardboiled egg, tomato and other vegetables you prefer to put on your salad.
