3 Ways to Cook Filipino Pancit Recipe


There is a saying for the Filipino when it is your birthday you need to eat noodles to have long life. The popular dish for Filipino is cooking pancit on that occasion.

There are three types of noodles cooked for pancit:
  1. Pancit Canton Noodles made of egg noodles
  2. Pancit Bihon (Vermicelli) made of rice noodles
  3. Pancit Miki made of thick egg noodles
In each dish for 1, 2 and 3 both uses the same ingredient as follow:

Note:

You can choose if you want to use chicken, pork or shrimp on your ingredient of the pancit.

Ingredient:
  • 3 Pieces chicken parts such as breast meat or thigh parts
  • 1/2 Kilo fresh shrimp remove head, skin and devein (optional)
  • 1-pound lean pork chopped (optional)
  • 1 Onion chopped
  • 2 Cloves garlic
  • 2 Carrot sliced into thinly match box sticks
  • 1/2 cabbage chopped
  • 1 Knorr chicken or pork cubes (depend on which meat you will have decided to use)
  • Squid ball sliced (optional)
  • 1 Chayote - peel and chopped (optional)
  • 3 to 4 cup water
  • Fish Sauce (Patis)
  • Black Pepper
  • String Beans sliced thinly
  • Chinese chorizo sliced (optional)
Step 1:
  • Boil the chicken/pork in a pot with water and slice onion.
  • Once cooked set aside
  • Keep the liquid can be used as your chicken/pork broth for the pancit.
Step 2:
  • Shred the chicken meat and remove the bones.
  • Set aside
Step 3:
  • Soak the pancit bihon in a bowl of water
  • Set aside
Step 4:
  • In a new pot place a little amount of cooking oil
  • Sauté garlic, onion, Chinese chorizo (optional), shrimp (optional)
  • Add the fish sauce
  • Add the carrot, cabbage, chayote and string beans
  • Add the chicken or pork and squid ball (optional)
  • Add the chicken or pork broth and chicken or pork cubes
  • Simmer and cook for 10 minutes
Step 5:
  • Strain out the pancit bihon
  • Add to Step 4
  • Optional you can combine pancit bihon and pancit canton together 
Step 6:
  • Season with black pepper (to your taste)
  • Mix well

Note:

Some people prefer boiling hardboiled egg and place on top of their pancit.

Other people squeeze calamansi or lemon juice on their pancit.

They serve pancit with toast bread with melted butter.

Other people combine and eat it with pork barbecue or fried chicken.
