Mom Violy wanted to eat crispy pata and pinakbet from Seafood Island Restaurant located in Cubao, Quezon City near the old Shopwise. We had arrived early being the first customers waiting for the restaurant to open. Few minutes later customers began entering the restaurant and we have already placed our order. Mom Violy ordered her crispy pata and pinakbet. Carmina ordered garlic butter shrimp since I don't eat crispy pata. Family member ordered calamari and shrimp fried rice. Macaroni salad has always been a trend to serve during this moment as the guest would rather eat this as a dessert after a big meal.
There are some people who will add fruit salad to this dish to combine a different flavor to remove the chicken to replace its taste.
Macaroni Salad Recipe
Ingredients:
- 1/2 - Chicken (boiled in water until cooked) Shred chicken by using knife or hands
- Or leftover chicken by using your knife or hands
- Mayo (any brand)
- Black pepper (depend on your taste)
- Salt (depend on your taste)
- Chopped onion (optional)
- 1 small package cooked macaroni elbow noodles
- 1 cup raisin
- 1 canned pineapple chunks - drain
- 2 tbsp pickle relish
Combine the cooked macaroni elbow noodles, raisin, pineapple chunks, pickle relish and chicken together.
- Season with salt and black pepper to your taste.
- Mix together
- Place in Tupperware
- Refrigerate
