After doing errands with the family my dad wanted to eat Vietnamese food in the area of Fremont . My dad brought us to Pho Lan Noodles House for our lunch. We all decided to eat one of our favorite Vietnamese dishes. We had ordered some appetizers fried wanton and fried chicken with fish sauce . My dad had ordered Lemongrass chicken include with rice and salad in his meal but was already full when he had eaten his wife's meal. She had ordered the Chicken Banh Mi and chicken clear soup. I wanted to try their Pork Banh Mi sandwich and requested no jalapeno pepper on it. The sandwich is quite big had to slice it in the middle and the remaining was for takeout. Bopis is made of lungs of the pig and some also add the heart of the pig. This recipe that Manang V cooks at our home only has the pig's lungs and I will give you a technique she does to clean the lungs before cooking the bopis.
Bopis Recipe
Ingredients:
- 2 Kilos - Pig's lungs
- 1 - Radish (peel and chopped small pieces)
- 2 - Whole Garlic (peeled and chopped)
- 2 - Onion Medium size (chopped)
- 1 - Cup Vinegar
- 3 - Cups Water
- Patis to taste
How to Clean the Pig's Lungs before Cooking:
- In a pot boil water add salt place the pig's lungs inside cook for one hour after it has been cooked strain the water and place it under cold water begin chopping the lungs the size of a ground meat small enough.
- Set aside
Cooking Instructions
Step 1:
- In a pot pour small amount of cooking oil add garlic and onion saute it than add radish, vinegar and lungs.
- Add water add season with patis once water has evaporated the bopis is already cooked.
- Ready to serve in a serving plate.
