Carmina's dad was craving for Vietnamese and wanted to bring his family have a meal. We are in the area of Brentwood, my dad remembered he used to dine in at CreAsian Wok 'n Roll . Upon entering there we're a lot of customers and the person asked how many we are seated at the table. The server handed us a menu asked us what we would like to drink. They brought out pitcher of iced water with glasses for us to pour our own water. My dad ordered a grilled lemongrass chicken combo with egg, shrimp, and an egg roll . Family member ordered basil leaf with chicken and garlic rice . Another family member had ordered a large Creation Special soup to share with everyone. Bopis is made of lungs of the pig and some also add the heart of the pig. This recipe that Manang V cooks at our home only has the pig's lungs and I will give you a technique she does to clean the lungs before cooking the bopis.
Bopis Recipe
Ingredients:
- 2 Kilos - Pig's lungs
- 1 - Radish (peel and chopped small pieces)
- 2 - Whole Garlic (peeled and chopped)
- 2 - Onion Medium size (chopped)
- 1 - Cup Vinegar
- 3 - Cups Water
- Patis to taste
How to Clean the Pig's Lungs before Cooking:
- In a pot boil water add salt place the pig's lungs inside cook for one hour after it has been cooked strain the water and place it under cold water begin chopping the lungs the size of a ground meat small enough.
- Set aside
Cooking Instructions
Step 1:
- In a pot pour small amount of cooking oil add garlic and onion saute it than add radish, vinegar and lungs.
- Add water add season with patis once water has evaporated the bopis is already cooked.
- Ready to serve in a serving plate.
