Carmina is traveling to the United States to spend time with her family. My dad planned a family gathering for Mother's Day at their favorite Pinoy restaurant . Since reservations aren’t possible, we arrived an hour early to ensure we could get a table for twelve before everyone else showed up. Later, the server called my dad's name and guided us to our table. The place was bustling with people enjoying meals and celebrating Mother's Day. Eggplant Katsu with Cauliflower Rice from Rhian Ramos' Healthy Appetite


Two years ago my visit in California my sister was on a diet while eating our dinner with the family member. My sister's rice was different than everyone else she had introduce me to Cauliflower rice that she had purchase in Trader's Joe.

My sister asked me if they had Cauliflower rice in the Philippines. It was my first time trying it and unaware if whether in the Philippines they had it or not.

In our household family members eat white rice or brown rice but never tried Cauliflower rice before although I am not much of a rice eater.

I have other family members who have served corn rice and black rice while I was visiting their home in the Philippines other than what my sister eats.

I was looking for healthy food to eat this time around for my early dinner. I came across finding something I wanted to try Eggplant Katsu with Cauliflower Rice from Rhian Ramos' Healthy Appetite for PHP 199.00 ($3.98) not including Grab Food delivery fee and tip to the rider.


I had requested to put the tonkatsu sauce on the side away not to get the eggplant katsu soggy. I had tried the tonkatsu sauce I felt it was sweet side prefer not to eat it.


There is radish, onion and carrots kind of pickled vegetables a bit sour although maybe if you like the tonkatsu it is suppose to balance out the flavor in your eggplant katsu with cauliflower rice.
