Passport renewal might seem mundane, but for Mom Violy and Carmina, it becomes a journey filled with laughter, tears, and unforgettable lessons.

A year ago, Mom Violy told Carmina that her US passport would expire in October 2025. Carmina mentioned she could renew it online, just like she did with hers. By the end of 2024, after booking a California trip for April 2025, Mom Violy decided to wait until the start of the new year. In January 2025, Carmina reminded her to renew before their vacation, but Mom Violy insisted there wasn’t time and she’d handle it in California. When they flew on April 30, 2025, immigration in the Philippines warned her about the upcoming expiration. Upon arriving in the US, Carmina suggested renewing at the post office, but others warned the process could take longer unless she paid extra or extended her stay. Mom Violy, a dual citizen with US and Filipino passports, kept changing her mind. Malunggay Veggie Canton Recipe



Today on January 19, 2022 Carmina went down at the kitchen at 11:00 AM to check on Manang V.

Manang V said, I had cooked your Malunggay Veggie Canton since I had leftover chayote from last night.

Manang V said it is actually really delicious even if the Maluggay Veggie Canton is a small package.

Carmina went upstairs to eat her Malunggay Veggie Canton for her brunch with a cup of coffee where we often do this on our merienda (snack).

Carmina saw one of her follower posting eating Malunggay Veggie Canton in Hawaii. Carmina decided to look it up and guess you can find anything online.

Malunggay Veggie Canton Recipe 

Ingredients:

  • 1/4 Cup - Chayote 
  • 1/4 -  Carrot (peel and sliced)
  • Half Cup - Shredded Cabbage
  • 2 - Cloves of Garlic (chopped)
  • 1 - Small Onion (chopped)
  • 1/2 Cup - Sweet Peas
  • 6 Pieces - Shrimp (clean, peel from shell and chopped)
  • Patis (to taste)
  • 1 Cup - Vegetable Stock
  • 1 - Package Malunggay Veggie Canton 
Cooking Instructions:

  • In a new pot place a little amount of cooking oil
  • Sauté garlic, onion and shrimp
  • Add the fish sauce and 1 cup of water/vegetable stock
  • Add the carrot, cabbage, chayote and sweet peas
  • Add Malunggay Veggie Canton cook until noodles are fully cooked
  • Seasoning with Black Pepper and mix well
  • Transfer in a serving bowl
