Mom Violy wanted to eat crispy pata and pinakbet from Seafood Island Restaurant located in Cubao, Quezon City near the old Shopwise. We had arrived early being the first customers waiting for the restaurant to open. Few minutes later customers began entering the restaurant and we have already placed our order. Mom Violy ordered her crispy pata and pinakbet. Carmina ordered garlic butter shrimp since I don't eat crispy pata. Family member ordered calamari and shrimp fried rice. After eating my air fryer vegetable fritters, I felt my mouth was too dry. I needed something else to add to my meal.
I came up with vegetable fritters udon cabbage soup to fill me up.
Vegetable Fritters Udon Cabbage Soup Recipe
Ingredients:
- 1 - Pack of Udon Noodles
- 3/4 - Cup of Cabbage (shredded)
- 2 Cups - Water
- 1 - Vegetable Stock Cube (any brand)
- 1 - Thumb size garlic (thinly sliced)
- 1 - Tbsp. Garlic (minced)
- Leftover vegetable fritters
Cooking:
- In a small pot pour small amount of oil add garlic, garlic and sauté until half cooked add the cabbage, water once boiling add the vegetable stock cube and udon noodles.
- On the top of the soup can just add your leftover vegetable fritters.
- If you want can also had some sunny side up egg or hardboiled egg. (optional)
