Mom Violy Craving for Filipino Dishes from Seafood Island Restaurant

  Mom Violy wanted to eat crispy pata and pinakbet from Seafood Island Restaurant located in Cubao, Quezon City near the old Shopwise. We had arrived early being the first customers waiting for the restaurant to open. Few minutes later customers began entering the restaurant and we have already placed our order. Mom Violy ordered her crispy pata and pinakbet. Carmina ordered garlic butter shrimp since I don't eat crispy pata. Family member ordered calamari and shrimp fried rice. Potato Salad with Asparagus and Carrots Recipe

Last week I went grocery shopping and purchase some vegetables planning to make some chicken afritada, chicken curry and other dishes with meat.

All a sudden I had skin allergies and was told to stay away from any meat and fish we have to figure what we can cook out of our meal.

I was informed by my cousin Mariles not to eat any food that is fried.

I don't have access of a oven in the house. 

I have to think what I can eat with my vegetables.

Carmina decided to make potato salad with asparagus and carrots. I didn't want to eat the carrots raw. I boiled it along with my potatoes, and asparagus.

Potato Salad with Asparagus and Carrots Recipe

Ingredients:

  • 1 - Small Carrot (peel and chopped into cubes)
  • 1 - Large Potato (peel and chopped into cubes)
  • 6 Pieces - Asparagus (chopped into cubes)
  • 1/2 - Small Onion (chopped)
  • Mayo (any brand)
  • Black Pepper (based on your taste)
  • Salt (based on your taste)
Cooking Instructions:
  • In a small pot add water and the vegetables potatoes, carrots and asparagus when water begins to boil place on low heat put a timer for 15 minutes until vegetables are fully cook. 
  • Use a fork to determine when it is already soft.
  • Use a strainer to drain the water transfer cooked vegetables into a bowl add the onions, mayo, season with salt, black pepper and mix well.
  • Can be eaten hot or cold all depends on your preference.
